Mosimann's:
Rightsizing the dishwash

Anton Mosimann ranks among the very greatest of chefs. Mosimann's Club in London is one of the most prestigious private dining clubs in the world. The club is housed in a former Presbyterian church built in 1830. Among the many period features is an original iron staircase, which had to be removed and reinstated to get the old rack transport dishwasher installed at the club's inception in 1987. The staircase couldn't be moved again.

Centrepiece of the kitchen is the cooking range, installed after the dishwasher and welded in place.

Mosimann's needed a new dishwashing system. To replace it with a same-size model, the whole of the kitchen cooking range would need to come out, a very expensive, messy and time-consuming procedure.

The consultancy challenge presented to Crystaltech by Mosimann's was to source an alternative smaller machine and prove to them that it gives the same performance in terms of quality and quantity.

Crystaltech carried out monitoring of several models, changing chemicals and water temperatures until we were satisfied we had found the perfect solution. On our recommendation, Mosimann's has now installed a minirack machine together with a new crockery and cutlery handling tabling system the combination of which achieves more than was achieved with the original dishwasher. Most importantly, the Minirack is compact compared with a conventional rack machine and could be carried into position and installed without moving the range. The original machine was cut up and removed.

"We were able to generate more space for the kitchen and the installation, by Crystaltech, went according to schedule over the August bank holiday.

"I am very happy with the Minirack system. We use it for china plates and glass dishes – they do not need polishing when they come out."
